Looking for a recipe that is super versatile? Look no further! This Shredded BBQ Pineapple Chicken is so easy to use on sandwiches, pizzas, tacos shells, or just as the main course! My family loves eating these (everyone except my daughter, who hates BBQ sauce right now). I know that you’ll love it too, and you’ll have plenty of ways to reuse your leftovers!

For this recipe, I usually pressure cook the chicken in my Ninja Foodi. I mean, why not? It takes eight minutes to cook this way 😉 it’s a real time saver when it’s a busy night! After it’s cooked, I take it out and shred it.
In a saucepan over medium-low heat, I pour the pineapples in the pan. You can use any kind that you like! I like the pineapple chunks, but I also like the crushed for this particular recipe. I pour the juice in the saucepan too. Next, I add the chicken, and then I pour barbeque sauce over the top. Stir the ingredients together, and then it them simmer.
That’s it, my friend! You have an easy dinner ready to go!
Using the Chicken For Different Meals
To complete the meal, you could spoon the chicken over some hamburger buns or some Hawaiian rolls. I love both options. Usually, when I do this, I make baked beans, coleslaw, and either twice baked potatoes or potato salad on the side. I’ve even made tater tots, French fries, and pasta salad on the side! My husband and kids aren’t picky about sides, so they’ll eat these with whatever.
If you have a lot left over, you can also turn this into a pizza! Make out your dough, and then put the BBQ Pineapple Chicken over the crust. Top it with some cheese (I used mixed cheese and parmesan). Bake it in the oven, and you have a totally new meal with your leftovers! Add side salads to the meal to add some greens, and you have a new family favorite pizza!
One last option I’ve used with the left over Shredded BBQ Pineapple Chicken was taco shells. I took the meat and put on taco shells with some cheese, and we ate Shredded BBQ Pineapple Chicken Tacos. They were a hit! I like to serve queso, salsa, and chips on the side and a Mexican salad. Sometimes, I include refried beans or baked beans on the side because I know that’s something my daughter will eat.
Crockpot Version
Pour pineapples, chicken, and barbeque sauce into the crockpot. If it’s going to cook all day, I’d use a larger can of pineapples to add some extra liquid to be on the safe side (14 ounces at the least). Let it cook for 6 hours on low or 4 hours on high. Shred the chicken once it’s finished cooking!

Shredded BBQ Pineapple Chicken
Equipment
- 1 Saucepan
Ingredients
- 8 oz Crushed Pineapples You can use a bigger can if desired
- 1.5 large Chicken Breasts
- 1-1.5 Cups Honey Barbeque Sauce Sweet Baby Ray's is my recommendation
Instructions
- Cook the chicken in a Ninja Foodi pressure cooker for 8 minutes.
- Shred the chicken once cooked.
- Pour crushed pineapples in the saucepan on medium-low heat. Add in chicken and barbeque sauce. Stir until well combined.
- Let simmer for 5-8 minutes.
