What is something quick and easy to make for a family dinner? Also, can you make it something that is versatile that every person in the house can eat? I know what you’re thinking… it sounds like a problem that only pizza can solve, but we’ve already had pizza this week. So what else can I make? Chicken Quesadillas are the answer, my friend!
Jump to RecipeThis tasty Mexican meal is very versatile, and it’s SUPER quick and easy to make. I usually make a variety of these. My two kids like the chicken and cheese quesadillas, but my husband and I like the cheesy chicken salsa quesadillas and Taco Bell Copycat Chicken Quesadillas. So I always find myself making a variety! I’ve been known to throw all kinds of things in burrito shells (even eggs, bacon, cheese, and vegetables). I promise… this is a recipe your whole family can love.
So What All Do I Need?
You need some burrito sized soft shells, shredded chicken (or beef), cheese, taco seasoning, and other items you’d like to put inside. I try to keep salsa, taco sauce (the mild Taco Bell sauce is my favorite), tomatoes, sour cream, and ingredients to make quesadilla sauce.
Side note: I do not typically cook with the sour cream IN the quesadilla. I prefer to use the sour cream as a “dipping sauce.” That’s just a personal preference.
Cheesy Chicken Ranch Quesadillas
For these quesadillas, I use shredded chicken that’s seasoned with a little seasoning salt and chicken broth. Next, I spoon out some of the chicken onto the burrito. Then, I add some spinach. You can also add some small tomatoes and whatever else you prefer. I then put Ranch and cheese over the chicken, close up the burrito, and grill it on the stove in butter until golden brown!
Chicken and Cheese Quesadilla
Again, I use shredded chicken for this recipe, but I add some mild taco seasoning to it. I then spoon out the chicken onto the burrito on one side, sprinkle cheese on top, and close up the burrito. Then I grill it in butter until golden brown. That’s all!
Cheesy Chicken Salsa Quesadilla
For this quesadilla, I will use the shredded chicken with the taco seasoning on it. I then put the chicken on one side of the burrito shell. Next, I pour some salsa, mild taco sauce, and sprinkle cheese on top. Fold up the burrito shell, and then proceed to grill it in the butter until golden brown!
Taco Bell Copycat Chicken Quesadilla
Again, we will use the shredded chicken with the mild taco seasoning already mixed in. Spoon the shredded chicken onto one side of the burrito shell. Pour some mild Taco Bell taco sauce over the chicken, and then pour some Taco Bell Copycat Chicken Quesadilla sauce over that. Sprinkle cheese on top, and fold the burrito in half. Grill it on the stove in salted butter until golden brown, and enjoy!

Possible Side Dishes
My favorite side dish for this meal is to make Mexican side salads. All I do is shred some lettuce, cut up tomatoes, and put sour cream and cheese on top. I usually have refried beans as a side dish also because my daughter loves them. You can also cook rice as an easy side dish!

Chicken Quesadillas
Equipment
- 1 Ninja Foodi Substitute with an Instant Pot, a pot of boiling water, etc.
- 1 Pan
Ingredients
- 1.5-2 Chicken Breasts
- 5-6 Burrito Sized Shells
- 2 Cups Fiesta Blend Cheese Amounts will vary with preferences
- 2 tsp Mild Taco Sauce I love the Taco Bell brand
- 1 tbsp Salsa Amounts will vary with preferences
- 1 Cup Taco Bell Quesadilla Sauce Amounts will vary with preferences
- 2 tbsp Chicken Broth
- 2 tsp Taco Seasoning
- 1 tbsp Ranch Amounts will vary with preferences
Instructions
- Place chicken breasts in the Ninja Foodi. Push the "pressure" button, and let thawed chicken cook for 8 minutes. If chicken is frozen, let the breasts cook for 13 minutes.
- After chicken is cooked, shred it. Pour chicken broth and seasoning salt in the chicken, and mix well. Then spoon chicken out onto burrito shells. Top with desired toppings (I used spinach, cheese, and ranch). Grill quesadilla in a pan on medium heat with butter until golden brown.
- Add taco seasoning to chicken. Mix well. Spoon chicken out on half burrito shell, sprinkle with cheese, and fold shell in half. Grill quesadilla in a pan on medium heat with butter until golden brown.
- Spoon chicken out onto half of the burrito shell. Top with salsa, cheese, and taco sauce. Fold burrito in half, and grill in butter on the stove until golden brown.
- Spoon chicken out onto half of the burrito shell. Top with taco sauce, cheese, and Taco Bell Copycat Quesadilla sauce. Fold the burrito in half, and place on the grill in butter. Cook until golden brown.
- Repeat the process for the rest of the chicken for any quesadillas you want to do multiples of. If you'd like to make a big batch of burritos, cook extra chicken.
