Do you all ever have nights where you need something simple to make for dinner? It needs to be simple, but it also has to be something everyone will eat, right? You’re in luck because my Mama’s Loaded Nachos fit the bill for this one!
Jump to RecipeMy daughter LOVES meals that involve chips, so I try to incorporate healthier things in the nachos so it’s not just chips and cheese for her. She’ll eat the taco meat, lettuce, tomatoes, sour cream, and shredded cheese, but she does not love salsa like I do. My husband cannot have the nacho cheese at all, so I always end up making him two tacos to go with his chips and salsa. My son is too little to eat big chips, so he normally eats little bits of the chips and everything else.
Again, that’s what I love about taco meat night. I can make whatever everyone else wants. I use basically the same ingredients for tacos and nachos, so it works out!
For the nachos, I always heat the nacho cheese up in the microwave. I heat it up by 1 minute increments and stir. Once it starts getting to where it bubbles a lot though, I start doing 30 second increments and stirring.
For the taco meat, I brown the ground beef and season it with seasoning salt. Next, I drain the grease out, add a little bit of water, and then I had some taco seasoning. I do not add the whole pouch. I usually add about half so it’s not too overwhelming. I like to be able to taste the meat and not just seasoning.
Next, I cut up some tomatoes and shred the lettuce. That’s all I do to prepare.
Building Nachos
To build Mama’s Loaded Nachos, I first start out by putting chips on a plate. I don’t put them in any special assortment either. I just put them on the plate. Next, I take the nacho cheese from the microwave and pour generous amounts of it over the chips. Then, I take the hot taco meat and spread it on the cheese.
After that, I take the shredded lettuce and cut up tomatoes and sprinkle them all over the meat and cheese. Once I do that, I add the salsa. The amount depends on how much you like. I add generous amounts because I love tomatoes that much. Next, I put a big spoonful of sour cream on top in the center. I then pour Taco Bell’s Mild Taco Sauce over everything, and then I top it all off with shredded cheese.
Is adding shredded cheese to nachos that have nacho cheese already on them too much cheese? I don’t think so!
Serve it hot, and enjoy!
Versatility
Do you have to add all of those toppings to the nachos? Why, of course not! You can modify and leave some out. You can also add extras. We don’t do hot sauce, but I know some people love it. You could also add peppers, jalapenos, onions, refried beans, avocado, or queso! What I love most about Mama’s Loaded Nachos is you can load them however you want. They’re delicious no matter what, and they’re so simple!
Side Dishes
I do not normally make sides to this meal, but I know some people like options. You can make some Spanish rice on the side, or you can do some refried beans topped with cheese and sour cream! You can also do a little side salad with sour cream and taco sauce.

Mama’s Loaded Nachos
Equipment
- 1 Frying Pan
- 1 Spatula
- 1 Microwave Safe Bowl
Ingredients
- 1 lb Ground Beef
- 1/2 packet Taco Seasoning I used mild
- 15 oz can Nacho Cheese any brand – I used the Ricos Gourmet Nacho Cheddar Cheese Sauce in my video
- 1 tbsp Sour Cream
- 1 tbsp Taco Sauce I like the Mild Taco Bell Taco Sauce
- 1 tbsp Salsa I use the mild Kroger brand salsa
- 1 tbsp Shredded Cheese
- 1 bag Tortilla chips
Instructions
- First, put the ground beef in the frying pan. Brown the beef and cut up with spatula in the frying pan as it cooks.
- Drain grease. Add 3 tbsp of water and 1/2 packet of taco seasoning. Stir and let simmer over low heat.
- Pour nacho cheese into a microwave safe bowl. Heat in the microwave for 1 minute, and stir. Heat for another minute, and stir. Once it starts bubbling, heat for 30 second increments before you stir again. Repeat until cheese sauce is hot.
- While taco meat simmers and cheese heats, shred some lettuce and cut up some tomatoes (if desired).
- Next, put tortilla chips on a plate. Pour the hot nacho cheese over the chips. Add as much taco meat as desired. Add shredded lettuce and tomatoes on top of the meat. Then put the salsa over the top, and add a tablespoon of sour cream. Add the taco sauce, and then sprinkle cheese on top.
- Serve while hot. Enjoy!
