Do you need something quick and easy for a week night that everyone can enjoy? I think pizza night is the winner in this category! BBQ Chicken Pizza is something that’s fun and delicious. It’s different from your typical marinara pizza because of the sweet, tangy barbeque sauce. What makes it even better is you can add whatever barbeque sauce you prefer! I use the honey barbeque because it’s my husband’s favorite.

Do you have someone in your family that isn’t a barbeque fan? Fear not because I do also. My solution: I make extra crust and make her her own pizza 🙂 she loves it. I keep marinara, cheese, and pepperonis on hand, so it’s no big deal.

Pizza night is one of my favorites because of that reason. Everyone can make their own pizza that they like. All you have to do is shape out some different crusts and let everyone add their own toppings. So fun and easy!

How to Start This Simple Recipe

The first thing I do is put one whole chicken breast and half of another in my Ninja Foodi. I do the “pressure” option, and it boils the chicken for me. What I love about this is I can cook frozen chicken last minute if needed. I cook the frozen chicken for 12-13 minutes. If it’s already thawed, I cooked the chicken for 8 minutes.

What if I do not have a Ninja Foodi? No problem! An Instant Pot has the same setting, or you can cook the chicken in the Crockpot all day instead. You can also boil chicken in water on the stove if needed. Where there’s a will, there’s a way! 🙂

Next Steps

Next, you will start to make your pizza crust. I’ve used pre-packaged dough before where I just add water, but I’ve also made my own crust. You do whichever option you like. Stores also have premade crusts if you’d rather go that route. I have found that the pre-packaged dough is nice to have on hand if you’re in a hurry, but making it yourself is the cheaper and healthier option.

After you make the dough, put it in a warm place to rise. I put oil on mine so that when I get it out of the bowl, it’ll be easier to work with.

Next, preheat the oven. For most pre-packaged dough, the over temperature is 375 degrees. I have found that at that temperature, my crust burns because I make it so thin. Because of that, I usually modify the temperature to 365 degrees. I still leave the pizzas in for the recommended 10 minutes though.

Once the dough has risen (this usually takes 10 minutes or so), I like to spray my pan with cooking spray, put a little oil on my own hands, and then get the dough out. I spread it as thin as I can and fill in the holes as I go. That’s it!

Pizza Assembling

After the dough is on the pan, the fun part starts. I take the cooked chicken and shred it. Next, I spread it as evenly as possible over the pizza crust. I then get the barbeque sauce and generously pour it over the chicken. After that, I spread shredded mozzarella, shredded fiesta blend cheese, and parmesan cheese over the top (the amount depends on preference).

Lastly, I put it in the oven for 10 minutes. Once it has browned on the edges of the crust, I pull it out and let it cook for 5 minutes before I cut into it. It’s so delicious!

Possible Sides for Pizza

My favorite side dish for this meal is to make side salads. However, the pizza alone is fine to me also. Some people like bread sticks and pasta on the side also. I just like the salads to add some vegetables to the meal 🙂
