Looking for a new side dish to add some pizazz to your normal dinners? Or maybe you’re looking for something delicious to ‘wow’ some dinner guests? I know the feeling! Sometimes, mashed potatoes just don’t cut it. Although mashed is preferable and normally a crowd pleaser, they just seem so boring and ordinary after the holidays. You need something new to add to the menu, and these Cheesy Ranch Potatoes are just what you’re looking for! Not only are they super easy, but they’re budget friendly and DELICIOUS! You’ll add these to your weekly rotation happily after one bite 🙂

Let’s Get This Party Started!

First, preheat your oven to 375 degrees. It takes a little time to heat up, so I try to do this ahead of time before I start chopping. Next, peel and chop your potatoes. I like to dice mine. So I lay the potato long ways and cut it twice. Then, I lay it on the “flat” side, and I cut it long ways twice again, and then I cut it several times the opposite direction. I repeat this process with 4-5 large potatoes (remember, I’m cooking for a family of 4, usually).

After the potatoes are cut up, spray a 8×8 oven safe dish with cooking spray. Then layer HALF of the potatoes on the bottom. Sprinkle about 1-1.5 tablespoons of Ranch seasoning over the first half. Add some seasoning salt, and then spread 1/4 cup of cheese evenly over the potatoes. Next, cut up 1 tablespoon of butter, and place the slices throughout the potatoes. This will keep them from sticking to the dish, but it will also add flavor (if you don’t love butter as much as me, you are welcome to substitute with oil here).

From here, we can start our second layer! Place the rest of the potatoes on top of the first layer. Then repeat the steps above (sprinkle the Ranch, seasoning salt, and cheese). Lastly, pour some milk in the dish. You want JUST enough to cover the bottom of the pan. Don’t worry; the potatoes absorb the moisture, and it helps make them softer and keeps them from burning on the bottom.

Place the potatoes in the oven for 45 minutes or until you notice the potatoes browning. When you notice them getting brown on top, pull them out, and stick a fork in the center to make sure they’re done to your liking.

What Can I Serve With These Potatoes?

The possibilities are endless, my friend! I served them on the side of my Chicken Casserole tonight, but I think they’d be delicious next to my Easy Stuffing Flavored Meatloaf, Parmesan Crusted Chicken, or my Parmesan Crusted Codfish as well! They’d be great to serve with fried chicken, fried cubed steak, grilled chicken, pork loin, or anything that’s barbequed!

Cheesy Ranch Potatoes

These delicious Cheesy Ranch Potatoes are so simple to make, and they're budget friendly! They will add pizzazz to any dish you already make!

Equipment

  • 1 8×8 baking dish
  • 1 Chopping Knife
  • 1 Cutting Board

Ingredients
  

  • 1 tbsp Butter
  • 1 Spray Cooking Spray
  • 4-5 large Potatoes Russet or Idaho would work best for size
  • 2 Dashes Seasoning Salt
  • 2 tbsp Ranch Seasoning
  • 1/4 Cup Shredded Cheese
  • 4 tbsp Milk You only need enough milk to cover the bottom of the baking dish.

Instructions
 

  • Preheat the oven to 375 degrees.
  • Peel and dice potatoes.
  • Spray baking dish with cooking spray. Divide the potatoes in half, and place half the potatoes at the bottom of the baking dish. Cut up the butter, and place throughout potatoes. Sprinkle seasoning salt and Ranch seasoning on top. Put half the shredded cheese over the potatoes.
  • Repeat the above process without the butter.
  • Pour milk in the bottom of the baking dish. You only need enough to cover the bottom of the dish to prevent burning and encourage the potatoes to soften.
  • Place in the oven and bake for 45 minutes. Then, remove from the oven and use a fork to check the softness of the potatoes. Serve, and enjoy!

Notes

These potatoes are AWESOME when you add some diced onions and chives to the mix. You could even add some chopped up bacon for extra flavoring!
