What You Need To Get This Casserole Started

First, you need some chicken. I usually portion my chicken out when I buy the whole packs. You can add more than what I do; I am simply trying to be thrifty with our meats because they’re expensive! I use 1 1/2 chicken breasts in this recipe, and I cook them in my Ninja Foodi (the pressure option). I cook them for 8 minutes if they’re thawed. If they’re frozen, cook them for 13 minutes!

Once the chicken is ready, shred it. Next, add the chicken, 1 can of cream of celery soup, and two big table spoons of sour cream to a casserole dish (9×9). Sprinkle some seasoning salt on top, and stir.

Preheat the oven to 350 degrees. Next, cook your chicken flavored stuffing as directed on the box. I always opt for the microwave option personally because it’s quicker. Once the stuffing is finished, put it on top of the casserole. Bake in the oven for 35 minutes or until bubbling. Wah-la! You have a perfect chicken casserole!

Possible Side Dishes?

This chicken casserole is a great comfort food meal, which makes me think of several side dishes that would suit it perfectly. I usually do some mashed potatoes, baked potatoes, or twice baked potatoes and green beans on the side. However, I think some sweet potatoes or sweet potato casserole and broccoli/mixed cheesy vegetables would be great too. Glazed carrots are delicious to pair with this also! I’ve also paired it with pasta salad or mac-and-cheese, side salads, and fried apples with it before. Let’s not forget that corn and dinner rolls would be great additions to this meal also! It just depends on what you like! It’s a versatile Southern recipe 😉

Equipment

  • 1 Pressure cooker/Ninja Foodi/Instant Pot You can boil chicken on the stove or in the microwave with Pampered Chef cookware also.
  • 1 9×9 Casserole Dish

Ingredients
  

  • 1.5 large Chicken breasts
  • 6 oz Box of Chicken Flavored Stuffing Mix any brand
  • 10.5 oz Cream of Celery Soup
  • 2-3 tbsp Sour Cream
  • 1 dash Seasoning Salt

Instructions
 

  • First, cook/boil chicken in Instant Pot or Ninja Foodi using the "pressure" button for 8 minutes.
  • Once chicken is cooked, shred it. Pour cream of celery, sour cream, and chicken into the casserole dish. Mix until well combined.
  • Preheat oven to 350 degrees.
  • Prepare stuffing according to directions on the box. Fluff with a fork, and then use a spoon to put over the chicken mixture.
  • Bake in the oven for 35 minutes or until bubbling. Serve it hot, and enjoy!

Notes

You can use cream of chicken soup if you do not have cream of celery. I prefer the celery because it gives it a better taste (to me).
