I know what you’re thinking…. there is no was this is a healthy meal. You’d be completely correct in thinking that! It’s not totally healthy, but is a beloved recipe! My children eat every bite! It does have black beans, tomatoes, corn, and chicken in it! So there are meat and veggies involved 😉 because it’s not entirely healthy, we only eat this once a month. If you have picky eaters that love Doritos, I encourage you to add Dorito Casserole into your monthly meals!

How Easy Is It To Make Doritos Casserole?

It is ridiculously easy! All you need is some cooked shredded chicken, sour cream, cream of celery soup, cheese, a bag of Doritos, black beans, corn, diced tomatoes with green chilis, and taco seasoning! That’s it! All you do crush up the Doritos, and spread half the bag on the bottom of a 9×13 inch baking dish (make sure you spray it first).

In a mixing bowl, combine all other ingredients. Yes, all of them! Make sure the beans and corn are drained first! Then spread them over the Doritos in the baking dish. Next, pour the rest of the Doritos on top, and sprinkle shredded cheese over them. Bake it in the oven at 375 degrees for 30-35 minutes or until it’s bubbling. That’s it!

What makes it even tastier? It feeds 6 people, and it costs roughly $10.64 to make… that’s $1.77 per person! Talk about a winning family recipe!

Can I Make This in the Crockpot Instead?

I have never tried this, but I was thinking about this the other day. You certainly could take all the ingredients and cook them in the crockpot all day (all except the Doritos). Once it’s all cooked, I would pour the mixture over some Doritos that are crushed up in bowls. Sprinkle extra Doritos and cheese on top!

Do I Need Side Dishes?

For this meal, I never make side dishes! However, if you choose to do so, I think side salads would be a great side for this. It’s a great way to add extra vegetables to the meal for sure!

Dorito Casserole

  • 1 9×13 baking dish

Ingredients
  

  • 1.5-2 lg Chicken Breasts
  • 2 tbsp Sour Cream
  • 2 cups Mixed Cheese
  • 15 oz Black beans; rinsed and drained
  • 10 oz Diced Tomatoes and Green Chilis (mild)
  • 15 oz Whole Kernel Corn (drained)
  • 15 oz Cream of Celery Soup
  • 1.5 oz Taco Seasoning (mild)
  • 14.5 oz Bag of Doritos (Party Size)

Instructions
 

  • Cook and shred chicken breasts first.
  • Preheat oven to 375 degrees.
  • Combine chicken, sour cream, cream of celery, taco seasoning, black beans, corn, and diced tomatoes. Stir until well combined.
  • Crush up Doritos in the bag. Spray the baking dish with cooking spray, and put at least half the bag (I add a few more) across the bottom of the baking dish.
  • Pour chicken mixture over the crushed up Doritos in the baking dish. Then sprinkle the rest of the chips evenly on top of the mixture. Sprinkle the cheese over the top.
  • Bake in the oven for 35 minutes or until bubbling. Let cool. Serve, and enjoy!
