Are you like me and constantly in search of a healthy snack option? I know I am. I have low blood sugar, so the doctors tell me to always look for a “protein” option as a snack. Sounds easy, right? Not really… not for me anyway. That’s when I found these yummy peanut butter energy bites! They’re quick and easy to make, and they’re freezer friendly!

When I say they’re freezer friendly, what I mean is this: if you don’t have a lot of time, I’ll show you how to save some. Triple this recipe, and put the extra energy bites in a freezer bag, and store it in your freezer. I do this for my husband every time before I have a baby. By doing so, when he goes back to work, I already have his snacks prepared for him. I just have to take them out of the freezer. SOOO convenient!

Convenient AND Healthy?!

My last little tid-bit of information involves health and weight loss. I started eating these more frequently after my first baby (I did breastfeed). These peanut butter energy bites helped me stay fuller longer, and they’re healthy. The oatmeal in them has health benefits, and the peanut butter has amazing amounts of protein. Because of that combination, I was able to lose my baby weight faster after I had my first child. Listed below are some of the findings.

Again, this recipe is super easy to make, and it’s convenient for any mom that’s on-the-go too! So how much protein is in these exactly? Here’s the breakdown:

  • 2 cups of peanut butter -> 130 grams of protein
  • 3 cups of old fashioned oats -> 15 grams of protein
  • 1 cup of flaxseed -> 31 grams of protein
  • 1 cup of dark chocolate chips -> approximately 1.5 grams of protein
  • 6 tablespoons of honey -> 0.6 grams of protein

Collectively, the entire bowl of ingredients is 178.1 grams of protein, but remember, you will not be consuming that much in one serving. I say all that to say that this is a HEALTHY snack option to help you stay fuller longer. It will help discourage you from eating other snacks, and it helps cure that sweet tooth craving!

Ingredients Needed

  • 2 cups of peanut butter (smooth or crunchy)
  • 1 cup of chocolate chips (dark chocolate or semi-sweet)
  • 3 cups of old fashioned oats
  • 1 cup of ground flax seeds
  • 6 tablespoons of honey

This makes approximately a whole gallon bag of energy bites. You can make a whole bag and leave them in the freezer until you’re ready to thaw them and eat. If you would like less, cut the recipe in half! Not a chocolate lover? No problem! Just back off on the chocolate chips and use less. However, if you love chocolate, feel free to add a little more!

Making the “Bites”

Literally, I throw all the ingredients in a large mixing bowl. You can either stir it up with a mixing spoon, or, for faster results, you can use a hand mixer! You can even throw them in your kitchen stand mixer! I’ve done it all, I promise!

After all the ingredients are well combined, get out a plate (I always use a plastic one). Tear off two sheets of wax paper. Place one on the bottom of the plate, and set the other one aside.

Next, put a little water on your hands, and use a spoon to get out some of the mixture. Roll it around in your hands until it forms into a ball. Then place it on the wax paper covered plate. The size of the ball is completely your choice!

You continue this process until the entire plate is covered. Then place the second piece of wax paper over the top. You will then make a second layer of peanut butter bites.

Lastly, place them in the freezer for an hour.

Once they’re frozen, you can take out as many as you need for the week. I usually take out enough for five days, and I put them in separate containers (3 per container). The rest of them, I keep in a gallon sized freezer bag. This usually lasts two weeks!

Peanut Butter Energy Bites

These delicious Peanut Butter Energy Bites are full of protein, but they're sweet enough to curb your sweet tooth and provide a healthier option!

Equipment

  • 1 Mixing bowl
  • 2 Sheets of Wax Paper
  • 1 Large Plate

Ingredients
  

  • 1 Cup Peanut Butter use crunchy for extra texture
  • 1 Cup Chocolate Chips
  • 2 Cups Old Fashioned Oats
  • 1/2 Cup Ground Flax Seed
  • 1/2 Cup Honey

Instructions
 

  • Combine all ingredients in a large mixing bowl, and stir until well combined.
  • Cover the plate with a sheet of wax paper. Set the second sheet aside.
  • Wet your hands with water. Use a spoon to get out a portion of the peanut butter mixture, and then roll it around in your hands. Do so until mixture forms a ball. Place the ball on the wax paper, and then start the process again.
  • Once the first sheet of wax paper is filled up, place the second sheet on top. Then form more of the balls to place on the top sheet.
  • After all the mixture is used, place the energy bites in the freezer on the plate for one hour.
  • After an hour, remove the plate from the fridge, and portion out the energy bites. Place the remainder bites in a freezer bag in the freezer. Store the bites you intend to eat for the week in the refrigerator. Take pieces out of the freezer bag as needed the day before you want to eat them so they have time to thaw in the fridge.

Notes

Using crunchy peanut butter adds more texture to every bite!
Any kind of chocolate chips will do! Milk chocolate, dark chocolate, and semi-sweet are all delicious in this recipe!
