Peanut Butter Energy Bites

These delicious Peanut Butter Energy Bites are full of protein, but they're sweet enough to curb your sweet tooth and provide a healthier option!

1 Mixing bowl
2 Sheets of Wax Paper
1 Large Plate
- 1 Cup Peanut Butter use crunchy for extra texture
- 1 Cup Chocolate Chips
- 2 Cups Old Fashioned Oats
- 1/2 Cup Ground Flax Seed
- 1/2 Cup Honey
Combine all ingredients in a large mixing bowl, and stir until well combined.
Cover the plate with a sheet of wax paper. Set the second sheet aside.
Wet your hands with water. Use a spoon to get out a portion of the peanut butter mixture, and then roll it around in your hands. Do so until mixture forms a ball. Place the ball on the wax paper, and then start the process again.
Once the first sheet of wax paper is filled up, place the second sheet on top. Then form more of the balls to place on the top sheet.
After all the mixture is used, place the energy bites in the freezer on the plate for one hour.
After an hour, remove the plate from the fridge, and portion out the energy bites. Place the remainder bites in a freezer bag in the freezer. Store the bites you intend to eat for the week in the refrigerator. Take pieces out of the freezer bag as needed the day before you want to eat them so they have time to thaw in the fridge.
Using crunchy peanut butter adds more texture to every bite!
Any kind of chocolate chips will do! Milk chocolate, dark chocolate, and semi-sweet are all delicious in this recipe!
