You can ask anyone who knows me personally, and they’ll tell you that this meal is a specialty of mine. It’s one meal that I’ve worked on perfecting since I’ve been married. Why work on it so long? You find ways to make something better as time passes, and my husband LOVES Asian food. However, these types of restaurants are very expensive. To save our budget, I learned how to make it myself, and he loves it. The big thing was learning how to make the perfect teriyaki fried rice.

So now I have you thinking, “can you really make your own fried rice without going to a Japanese restaurant? Can it taste just as good?” It certainly can! You can do this! It’ll also cost a fraction of the price you pay at a restaurant! This teriyaki fried rice is a great show-stopper for your Asian food nights!

Cooking The Rice

Whatever rice you choose to cook with, follow the directions on the box/bag. For mine, it says to use a cup of rice and 2 cups of water. So I have to double the water no matter how much rice I cook. So for this recipe, I used 1.5 cups of rice and 3 cups of water. I let the water boil the rice, and I just stirred occasionally. The best way to know if the rice is finished cooking is to try it and make sure it is soft.

Frying the Rice

This part sounds daunting, but it is not! Add some oil to your rice (I would add about 1/2 cup; you can always add more if needed). Push the rice to one side of the pan so that you can put your eggs in the same pan. I used 2 eggs for this recipe. As the eggs cook, pour in 1/4 cup of teriyaki sauce and generously sprinkle in some celery salt.

Now, let it cook. Continue stirring the eggs. Once the eggs are cooked, you can start mixing it all together! After the contents of the pan are mixed, let them sit on the burner and fry. After about 2-3 minutes, use a spatula or large spoon to start turning the rice over. You want it to start browning. If it hasn’t browned on the first side, try letting it sit a little longer.

The key is to keep flipping the rice until all of it is a little browned but not burnt. Thus, don’t leave it sitting for too long 😉 when you can, do a taste test. You might need to add a little more sauce or a little more salt depending on what you like.

Congratulations! You now have teriyaki fried rice!

What Can I Make to Go With It?

The meat options are endless! I’ve made teriyaki salmon, teriyaki chicken, shrimp, and steak to go with this rice. I always make some grilled vegetables on the side also. To save time, I usually buy the frozen broccoli bags or the California blend vegetable bags. I just put them on aluminum foil on my grill in oil and teriyaki sauce and let them cook. Fresh vegetables are great too, but sometimes, I just like to save on time! You can also add vegetables to the rice if you have some picky eaters. It makes it easy to hide vegetables that way 😉 I like adding some frozen peas and carrots to my rice when I remember to buy them!
