Vegetable Soup

Need a warm comfort food for a cold day? Try this wonderful vegetable soup! It's like a hug in a bowl.

Equipment

  • 1 Crockpot
  • 1 Frying Pan
  • 1 Knife and cutting board

Ingredients
  

  • 1 lb Ground Beef
  • 3-4 Potatoes Russet, Idaho, or Sweet will work
  • 3 Carrots I get the ones I cut myself
  • 15 oz Can of Corn
  • 19 oz Progresso Tomato Soup
  • 28 oz Diced Tomatoes
  • 12 oz Frozen Green Beans or 15 oz can of green beans
  • 6 oz Tomato Paste
  • 1.5 cups Beef Broth

Instructions
 

  • First, cook the ground beef in a frying pan. While that cooks, peel and dice 3-4 potatoes and 3 carrots.
  • Next, pour tomato soup, diced tomatoes, and tomato paste in the crockpot. Add the can of corn (drained), frozen green beans, diced potatoes, and diced carrots.
  • Pour in beef broth and ground beef. Sprinkle with seasoning salt and pepper. Stir, and let cook for 4 hours.
  • After 4 hours, stir again. Serve hot, and enjoy!

Notes

PRO TIP: After soup is finished cooking, test-taste it. If it is sour (some canned tomatoes are very, very sour), sprinkle in some sugar or honey ;)
Need the soup to go a little further for an event? Add in some more beef broth, tomato soup, and diced tomatoes! Add in some macaroni as a filler to help feed your guests. 
Do you need the soup to cook while you're at work? No problem! Put the crockpot on low for 6 hours. It'll be ready when you get home!
